Sauerkraut Salad

If you were able to tune in on Facebook a couple weeks back, we were talking probiotics and I showed you how to make sauerkraut (super easy).  If you missed that you can find it here.

In this week’s recipe, I am going to show you how to make one of my favourite simple salads, using sauerkraut and a few other ingredients!

Recap: Sauerkraut is a fermented food that feeds good bacteria to your gut lining for improved digestion, immune function, and other things that you can read about here.

Ingredients:

  • Two heaping forks full of sauerkraut
  • 1/8-1/4 red onion (diced)
  • 1/4 cucumber (quartered and diced)
  • 1/2 avocado (chopped)
  • 1/2 lemon (juiced)
  • pinch of sea salt

Method:

  • chop all ingredients
  • mix together in a bowl
  • top with lemon juice and sea salt

This salad feeds your body prebiotics (feeds probiotics), probiotics, healthy fats, and electrolytes.  It is a great side dish for any protein, or works well as a snack in the afternoon!
